Wayne Gretzky Cabernet Franc Icewine 2019 VQA 200mL

WINE MAKING
This small lot Icewine is harvested from naturally frozen Cabernet Franc grapes from Niagara Peninsula vineyards at minus 10°C. Pressed frozen, releasing the pure extract from each grape. Fermentation is performed at a cool temperature to retain freshness and bright fruit flavours, and 30% of the wine is fermented and aged in older French oak barrels for added complexity.

FLAVOUR PROFILE
This Cabernet Franc Icewine has a cranberry red colour with an orange copper hue and a wonderful bouquet of wild strawberry, red currant coulis, caramelized sugar, and toasted cinnamon stick. The rich and silky mouthfeel has the perfect balance of acidity which lifts and excites the experience, along with bright clean flavours of strawberry jam, raspberry, and red plum. Pomegranate molasses, strawberry preserves, rhubarb, and sweet spice notes linger exquisitely on the finish.

SERVING SUGGESTIONS
Serve chilled at 8 to 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. Enjoy during a meal, with pâté or with foie gras for a mouth sensation. Try with black olive tapenade on crusty baguette for a wonderful appetizer. Enjoy after a meal, with fruit-based desserts of cherries, blackberries, rhubarb and strawberries, or dark chocolate. Also enjoy with blueberry tarts; strawberry rhubarb pie; dark chocolate dipped strawberries; dark chocolate cake with strawberry drizzle.
